Permanently turned off store-bought bread. If I can't pronounce the ingredients, something is wrong. Unless, of course, it's ice-cream. In which case, I will just shut my eyes and indulge. It's slow-churned, right?

Elaine's Wonderful Whole Wheat Bread
1 cup regular oatmeal
2 cups boiling water
1/2 cup honey
1/3 cup warm water
1 1/2 T. yeast
1/4 cup olive oil
3/4 T. salt
1/4 cup gluten
Whole wheat flour (no white flour necessary!)
1. In a mixer/mixing bowl, add oatmeal and boiling water. Add honey. Don't mix anything yet.
2. In the measuring cup that you measured the honey, add the 1/3 cup of warm water and the yeast. The honey will help the yeast activate more quickly.
3. While the yeast is activating, add the olive oil, salt, and gluten to the mixing bowl.
4. While mixing those ingredients, add 2 cups of whole wheat flour to cool the mixture. Then, add the yeast mixture.
5. Continue adding whole wheat flour as you are mixing. Add until the dough no longer sticks to the side of the bowl. (usually about 2-3 cups for me)
6. Cover bowl and let rise for 45-60 minutes.
7. Dump out and divide into two loaves. Put into bread pans sprayed with cooking spray. Let raise for 30 minutes.
8. Bake at 350 degrees for 30 minutes.
I like to eat it right out of the oven with butter and homemade strawberry jam.
